2/3 Cup Kimchi, drained
1 Scallion, sliced
In a small nonstick skillet over medium heat, warm oil.
Add kimchi and press together to form a disc-shaped nest.
With a spoon, make a depression in the top and crack egg into it.
Top with scallions.
Cover pan and cook to desired degree of doneness, about 4 minutes for over-easy.
