SWEET POTATO PUREE WITH GOAT CHEESE AND TRUFFLE OIL

INGREDIENTS:
Makes 6 servings
2 ½ lbs. sweet potatoes, peeled, cut into 1 ½” pieces
4 oz. soft fresh goat cheese, crumbled
2 T. butter
1 t. Verbena white truffle oil + a bit more to drizzle
Salt & Pepper to taste
DIRECTIONS:
Coat potatoes with olive oil, salt, and pepper
Bake sweet potatoes on large pan in a single layer at 425F until tender, about 30-35 minutes.
Top with cheese, butter and drizzle truffle oil.
