SWEET POTATO PUREE WITH GOAT CHEESE AND TRUFFLE OIL

INGREDIENTS:

Makes 6 servings

  • 2 ½ lbs. sweet potatoes, peeled, cut into 1 ½” pieces

  • 4 oz. soft fresh goat cheese, crumbled

  • 2 T. butter

  • 1 t. Verbena white truffle oil + a bit more to drizzle

  • Salt & Pepper to taste






DIRECTIONS:

  1. Coat potatoes with olive oil, salt, and pepper

  2. Bake sweet potatoes on large pan in a single layer at 425F until tender, about 30-35 minutes.

  3. Top with cheese, butter and drizzle truffle oil.
