Tuscan Herb Zucchini Pappardelle



  1. Heat lemon infused olive oil over medium high heat. Add garlic and sauté for 2 minutes, or until fragrant; don't let it brown.

  2. Add cherry tomatoes and cook until tender. (Add additional veggies at this point, green peppers, mushrooms..) Set aside.

  3. Using the same pan, heat the Tuscan herb infused olive oil over medium heat and add zucchini. Cook until tender but still slightly crisp, about 5 minutes, tossing occasionally.

  4. Toss vegetables back in along with additional spices, toss until combined. Plate and Serve.
