Vanilla Bean Olive Oil Pound Cake


INGREDIENTS:

  • 2 Eggs at room temp

  • 1 1/2 tsp Baking Powder

  • 3/4 Cup Granulated Sugar

  • 1/4 Cup Almond Milk, unsweetened

  • 2 tsp Vanilla Extract

  • 1/3 Cup Verbena Vanilla Bean Olive Oil

  • 1 1/4 Cups All-Purpose Flour

  • 1/4 tsp Salt

DIRECTIONS:

  1. Preheat oven to 350 degrees. Spray an 8x3.5 loaf pan with nonstick baking spray and set aside.

  2. In a glass bowl, add the eggs and then sugar. Using a mixer, beat until well-incorporated.

  3. Pour in the unsweetened almond milk, vanilla extract, and olive oil, then blend until smooth.

  4. In a separate bowl, sift together the flour, baking powder, and salt.

  5. Slowly pour wet ingredients into dry ingredients, mixing as you add the wet ingredients.

  6. Transfer to a greased loaf pan. Bake for 50-60 minutes, or until a toothpick inserted into the middle of the cake comes out clean.
